Super Garlic Mashed Potatoes

Ok, I suppose you could adjust the amount of garlic to suit your tastes… Doubling the potatoes, cream cheese and butter OR halving the various garlic might be a good place to start. For the rest of us, lets get the GARLIC on!

Pairs well with Meatloaf.

You will need:

  • 6 Russet Potatoes- Peel or not up to you- cut into chunks
  • 1 head fresh garlic- peeled and pressed or sliced
  • 2 Tbls jarred minced garlic
  • 2 Tbls dehydrated garlic slices
  • 1 Tbls garlic powder
  • 1 Tbls Garlic Rub
  • Roasted Garlic salt (regular garlic salt could be substituted)
  • Fresh ground Black Pepper
  • 1/2 stick butter
  • Garlic Oil (or homemade garlic oil)
  • 4 oz. cream cheese

Cover the potatoes, dehydrated garlic slices and jarred minced garlic with water and turn on the heat. 

Meanwhile in a small pan add butter, garlic oil and fresh garlic to a low burner. Low and slow will create a sweet and flavorful butter sauce for your mashed potatoes.

When a fork can easily pass through the potatoes, they are ready. Drain and return to the pan. 

Use a potato masher to break up the potatoes and garlic that cooked with them. (see… it does have a purpose other than to make drawers impossible to open)

Add the slow cooked fresh garlic and the butter now infused with delicious garlic flavor, plus the garlic powder and Garlic Rub seasoning. Mix well.

Incorporate 4 oz of cream cheese into the potatoes. 

Taste test the potatoes and add Roasted Garlic Salt and pepper to taste. 

Serve and Enjoy!
