Homemade BBQ Sauce for Canning

Ever versatile and delightful. This BBQ sauce is canned while “young” so the flavor develops in the jar, not on the stove. I have used this BBQ sauce in all the usual ways: when grilling chicken, ribs, burgers or as a condiment or dipping sauce. I have also used this sauce in other recipes throughout this website. However you normally use BBQ Sauce, you won’t be disappointed in this version.

You will need: 

Start by heating the olive oil over medium heat in the bottom of a stock pot, add onion and celery. Saute until onion is soft. Next add garlic and stir for 3 minutes, enough to take the raw bite out of the garlic.

Next add the tomato sauce and remaining ingredients. 

Mix well and let simmer for 30 minutes. If you are planning to use this sauce without canning, you will want to simmer for 3 hours to really get the flavor right.

Remove the cinnamon stick and use an immersion blender to blend the sauce to a smooth consistency. 

Taste to make sure it is to your liking… keep in mind the flavor will intensify after processing.

Pour hot BBQ sauce into prepared hot jars. You can choose to use pint, half pint or even quart size jars.  Leave 1/2 inch of head space. Wipe rims, plac lids and rings. Process in water bath canner for 20 minutes for pints/half pints or 40 minutes for quarts. Remove from heat, let sit for 5 minutes before placing onto towel lined surface. Leave untouched for a full 24 hours, check seals, wash gently, label and store.
