Instant Oatmeal

Instant oatmeal is quick, delicious and good for you compared to other “instant” choices for breakfast. We are all familiar with the store bought versions. Here is how to make your own at home:

This recipe is for a large batch. You can make individual pre-measured portions to have in the cupboard for the kids or yourself, or you can store in a large container and portion as you go. You have the option to add the dried fruit or berries now, or when you make it. You even have the option to use fresh or dehydrated fruits and berries.  Like nuts, or granola… add them! The customization and creativity is only limited by your imagination. Kids love to be involved in making their own. Have a few portions premade for week days or make it a “breakfast bar” on the weekends with the base mix and bowls of options for the family to have fun! (I have done this the morning after a sleep over.)

You will need: 

  • 10 cups quick oatmeal
  • 1/2 cup plus 2 Tablespoons powdered cream cheese 
  • 1 1/4 cup powdered heavy cream – Do Not Use Creamer!
  • 1 1/4 cup brown sugar
  • 3 Tablespoons ground cinnamon – you can use more if you like
  • 1/2 Tablespoon nutmeg
  • 2 teaspoons kosher salt
  • Dried fruits/berries- I especially like peaches, apples, blueberries, strawberries, gooseberries or cherries. 

Once you have your ingredients gathered, measure into a large bowl or kitchen-aide mixer with the exception of the dried fruits or berries. 

Mix on a low speed or mix by hand until all ingredients are well incorporated. 

You can choose to measure 2/3 cup into individual containers or ziploc sandwich bags, or into one big large container. 

Note: This recipe is for ‘n cream instant oatmeal (as in peaches ‘n cream, strawberries ‘n cream…) to make oatmeal less creamy replace the powdered cream cheese with powdered milk. I  do this when I am making apple instant oatmeal, as I don’t care for “apples ‘n cream”. I will also use dark brown sugar in the basic mix for apple oatmeal. 

To serve: 

For each portion measure 2/3 cup of mix and add dehydrated fruits or berries if you haven’t already done so. Mix in 2/3 cup of water and microwave on high for 90 seconds in a Ceramic Egg Cooker, then let sit in the microwave for another 90 seconds. If you are using fresh fruits or berries, nuts, yogurt, granola etc..  add them at this point. Mix and enjoy!

*Alternate Method: Mix in equal parts of boiling water and mix, stir, cover and let rest for 3 to 4 minutes. This is great when you are out camping! 

Use more or less water if desired. This measurement is what I use. Have fun starting your day! 

 To make an individual bowl without making a big batch measure out:

  • 1/2 cup instant oatmeal
  • 1/2 Tablespoon powdered cream cheese
  • 1 Tablespoon heavy cream powder
  • 1 Tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • dash of nutmeg
  • dash of salt
